I’d actually use my volvo. I have fun with it on dirt roads, so I think it would be really fun around the nurburgring! It oversteers though, and loves to whip around when you counter steer, so I would have to get some actual skill if I want to do anything impressive. Impressive with that car being faster than 15 minutes lol
Love the idea, it is more about learning how to drive on a track than drive a car with much power without knowing how to actually handle it!
Can pick up the N/A version of this gen MR2 for about a grand here in the UK. Mid engined, RWD, lightweight, short shifting manual? Perfect.

Don’t wanna sound like a Honda fanboy, but: Any lightweight civic. Easy to drive, easy to control, easy to run.
