They do, it’s used only for taking off, after that you just need to lift off the throttle to change gears.

Like Dirty Harry said, they do. They only use it for taking off, after that you can shift without using the clutch.
They do use it when pulling handbrake turns, which is pur e logic because you don’t want to send torque to the wheels while applying the handbrake.

Some do, some don’t.

Formula 1 has sequential gearbox, no clutch pedal. The clutch mechanism exists but no clutch pedal.

Sorry, Pedro, for being a stickler, but everything technically has a clutch mechanism of some sort, some have simply no clutch pedal.
